Deliciously dark and vegan chocolate brownies

I love an easy and deliciously rich brownie recipe for a weekend treat or to bring round my friends - and these are no exception!


This is my favourite go-to recipe whenever I have a sweet tooth - and the best thing is they are vegan!

Warning: these won't last long amongst friends and family.



Ingredients

250g Plain Flour

250g Caster Sugar

70g Cocoa powder

1 Teaspoon of Baking Powder

1 Teaspoon of Salt

1 Teaspoon of Vanilla extract

200ml of Olive Oil (or vegetable)

250ml of Almond milk


Ingredients (olive oil, flour, sugar, baking powder, oat milk, salt and vanilla) for dark chocolate brownies













*ingredients may be dependent on personal preference, see notes at bottom if you wish to adjust quantities accordingly.



Method:


Step 1: Pre-heat your oven to 160c fan - 180c - 350f and grease a 8"x 8" (20x20cm) tin.


















Step 2: Sieve then mix together the dry ingredients (Plain flour, caster sugar, cocoa powder, baking powder and salt).






















Step 2: Mix the wet ingredients together (almond milk, oil, vanilla extract) in a jug then pour the wet ingredients into the dry ingredients.






















Step 3: Whisk the mixture for 2-3 minutes until gleaming.






















Step 4: Pour the mixture into a baking tray and bake for 25-35 minutes (depending how gooey you like your brownies - with no eggs in the mixture it makes it easier to undercook a bit) or until a cocktail stick comes out clean.


























Step 5: Leave to cool, then cut up into slices as big as you desire!




















Step 6: Enjoy!
















Notes:

  • These brownies are quite dark and rich, if you have a sweeter tooth, try upping the sugar to 300g or even 350g

  • I like to add white chocolate chips to add more flavour and sweetness

  • If you like them gooier or oiler, you can up the oil to 250ml. Extra virgin olive oil gives a nice richness to these brownies.

  • You can up the cocoa to 80g if you like them extra dark

  • If you like them gooey like me, I'd suggest 25 minutes - if you prefer them more cooked then give them 35-40 minutes

  • These brownies are on the softer side so don't tend to get crispy

  • Keep in an airtight container for maximum quality - they tend to last about 4-5 days

  • If you love chocolate, try drizzling it over the top once they have cooled

  • You can replace with other types of milk or make them not vegan if you want!
